Prubechu, started in 2014, serves classic flavors and dishes from Guam and the Mariana Islands. Chef Shawn interprets the classics by drawing inspiration from what is available seasonally and locally while maintaining the soul and integrity of each dish
Chicken Kelaguen, Potato Salad, Red rice, Pork Belly, Tinaktak (coconut braised beef with handmade noodles), KO’KO’ wings, and Spicy hot tamales Gisu are great options to try.
Customers will find unique and rare Chamorro dishes with influences from Spanish, American, and Japanese cuisines and the chef’s creative takes on flavors and experiences at Prubechu.
The restaurant is set in an open-air (and tented) heated patio serving island flavors, natural wines, and local craft beers.
True to the island cuisine inspiration, the dishes use coconut, root vegetables, rice, and fish.
There is an 11-course set fiesta table menu option. Customers can also select from an a la carte menu. A la carte menu is a great option for first-timers going in a group to try out many dishes.
