Rubirosa came into its existence in 2010 from the desire of Aj Pappalardo, the son of Giuseppe Pappalardo, the founder of famed Joe & Pat's in Staten Island, to create an institution like his father's in Manhatten. The place became an instant hit for pizzas and instant Italian classics featuring a wide array of Pasta made fresh in-house daily. The pizza uses 60 plus years old heirloom recipes from his father's establishment. Rubirosa is famous for its vodka sauce.
