The first Bite opened in a unique corner space on Bleecker and Lafayette in 2002 by Ami Melamed with a fashion industry background, offering no more than five sandwiches. Today, the joint offers one of the most eclectic menus in the city inspired by Ami's travel around the globe with different cuisines and spices ranging from a simple Mediterranean sandwich to a Thai-inspired curry, an Italian staple panini to a classic Moroccan appetizer. The ingredients at Bite are fresh and simple, without any preservatives. The bread comes fresh every day from Balthazar bakery, the cheese from Joe's dairy, the soups, and the dressings are all prepared from scratch every day in-house.
